Asparagus Salad with Tomato Vinaigrette and Broken Feta

Ingredients

1/2 bunch Asparagus
1 Tomato peeled seeded and diced
8 Kalamata Olive (diced)
1 tbs Fresh basil (chopped)
1 tsp Fresh tarragon (chopped)
1 tsp Fresh parsley (chopped)
3/4 tsp Fresh garlic (chopped)
1 tbs Shallots (thinly sliced)
4 oz Tomato juice
2 oz Rice vinegar
2 oz Extra virgin olive oil
1/4 tsp Black pepper
1/2 tsp Sea salt

Instructions

In mixing bowl combine vinaigrette ingredients let marinate for 20 minutes and serve over blanched asparagus garnish with tender greens and crumbled feta cheese.
