Chicken Liver Mousse

Ingredients

1 lb Chicken liver
1 lb Butter
1/4 cup Shallots (diced)
1/4 cup Garlic (diced)
1 tsp Nutmeg
1 tsp All spice
2 tbs Fresh thyme (chopped)
1/2 cup Brandy
Salt and pepper to taste

Instructions

Melt ¼ of butter in sauté pan. Add shallots and garlic and sauté for 2 minutes. Add chicken liver and sauté till cooked (still slightly pink). Add nutmeg, all spice, thyme, salt and pepper and toss with ingredients. Add and flame Brandy to cook off all alcohol but to retain the Brandy flavor. When flame burns out, put mixture into food processor with rest of butter and puree till smooth. Chill till firm (approximately 4 hours).
