Asian Braised Short Ribs

Ingredients

3 lbs Short ribs (cut into large cubes)
1 lb Chuck eye beef (cut into 1 inch cubes)
1/2 cup Tomato paste
1 Vidalia onion (medium dice)
1 bottle Red wine
1 tbs Whole black peppercorn
1 Dried bay leaf
2 Large carrots
3 stalks Celery (large dice)
1 cup Soy sauce
1 cup Water
1 cup Brown sugar
1 tsp Red pepper flake
1/2 lb Fresh ginger (peeled and small diced)
2 tbs Sesame oil
2 cups Rice wine vinegar
1 stalk Fresh lemon grass

Instructions

Marinate short ribs and chuck eye beef with 1 cup of soy sauce for an hour. Pan sear all of the beef. Make sure to get a nice color on all sides and set aside. In same pan deglaze with red wine and add all ingredients. Cook for about 10 minutes. Add beef and cover with beef stock. Cover stock pot and open every 10-15 minutes. Cook over medium heat until meat is tender – about 1 ½ to 2 hours. Stir Fry Vegetable with oil, sesame oil, salt and pepper. Then serve.
