Apple Fritters with Italian Sausage and Pepper Frittata with Fresh Mozzarella

Ingredients

2 Eggs
3 ounces Sugar
4 ounces Water
6 ounces White wine
6 ounces Apple cider
1/2 Lemon zest
1/2 Orange zest
14 ounces AP flour sifted
3 Apples
As Needed Flour, sugar, maple syrup
1 tbs Olive oil
2 cups Chopped Italian Sausage
1/2 cup Onions (sliced)
1 cup Roasted bell peppers (yellow and red)
6 oz Fresh mozzarella (sliced)
2 tsp Garlic (minced)
1 tbs Italian parsley (minced)
10 Eggs
1/3 cup Heavy cream
pepper and salt to taste

Instructions

For Fritter
In a medium sized bowl mix the first 5 ingredients blend until smooth, add the citrus zests, Flour and salt mix only till incorporated do not over mix.

Peel core and slice the apples a quarter of an inch thick store in Orange juice or lemon water to avoid oxidation until ready to use.

In a large tall sided skillet on medium heat add vegetable oil (you will need about ¼ inch to cover the bottom of the pan to fry the apples) heat the oil to 350 degrees. Take your apple rings and dredge them in the flour till coated completely, shaking off any excess. Place the flour coated apples into the fritter batter making sure the whole apple is coated. Gently place the coated apples into the hot grease making sure to drop the apple falling away from you to prevent burns. Cook until golden brown and turn the fritter over to finish cooking on the other side. Once cooked remove from the pan place on a brown paper bag or towel to remove excess oil sprinkle liberally with powder sugar and serve warm with Maple Syrup.

For Frittata
Heat the oil in 10-inch nonstick, ovenproof skillet. Add sausage and saute until it begins to brown, about 3 minutes. Add onions and peppers, saute until golden, about 3 more minutes. Stir in garlic and parsley cook another 30 seconds.

In a blender combine the eggs with the heavy cream, pepper and salt and process briefly until frothy. Pour the egg mixture into skillet and cook, mix slowly until frittata to set but center is loose, about 4 minutes. Arrange Cheese on top and place under broiler or hot oven and cook until mixture is just set on top and cooked through, about 3 to 4 minutes. Cool 2 minutes, slide onto plate cut and serve.
