Oak Planked Local Whitefish and Perch Roadhouse Duo

Ingredients

3 Whitefish fillets (cut into half, skin on)
1 pinch Kosher salt
1 pinch Paprika
2 ounces Mashed potatoes
12 Perch fillets
1 cup Flour
1/2 tsp Garlic powder
1/2 tsp White pepper
1 tsp Kosher salt
1 tsp Paprika
2 ounces Blended oil
12 ounces Remoulade Sauce
6 Lemon wedges

Instructions

Whitefish Plank Setup
Trim whitefish fillet to 6 ounces. Lightly season with salt and paprika. Place on seasoned oak or cedar plank. Place mashed potatoes in pastry bag with a "star" tip and pipe potatoes onto plank. Place in 400 degree oven for 12 minutes or until flesh turns white throughout.

Perch Preparation
In mixing bowl place flour and add garlic powder, white pepper, salt and paprika. Lightly coat each perch fillet in seasoned flour. Heat saute pan. Add 2 ounce oil and lightly brown perch on all sides. Remove when golden brown.

Whitefish and Perch Plateup
Place sauteed perch fillets on whitefish plank. Garnish plank with lemon wedge and favorite remoulade or tartar sauce.
