Orange Bourbon Glazed Salmon and Cranberry Pecan Relish

Ingredients

4 8oz King salmon (trimmed)
1 cup Orange marmalade
2 tsp Whole grain mustard
2 tbs Bourbon
1 dash Salt
1 dash Cayenne pepper
1 cup Fresh cranberry
1/4 cup Sugar
1 tsp Orange zest
1/2 cup Toasted pecans
1/4 Orange (juiced)

Instructions

For Salmon:
Whisk all ingredients together and spread liberally over 4 – 8 oz salmon filets. Bake in a 350 degree oven for 10 – 15 minutes or until just cooked through. Serve with Cranberry Pecan Rice and Fresh Vegetables.

For Relish:
Place the cranberries and sugar in a food processor and lightly pulse, add the orange juice and zest and continue to pulse. Add the toasted pecans and lightly pulse. Serve over your favorite white rice recipe.
