Pecan crusted chevre cakes with Calvados – Michigan apple compote

Ingredients

4 oz Chevre (cheese)
2 oz Peccans (chopped)
2 Eggs (beaten)
1 tbs Butter (clarified)
1 Michigan green apple (small dice)
pinch Cinnamon
pinch Allspice
pinch Ginger
2 oz Riesling
2 oz Brown Sugar

Instructions

Using the standard breading method; dredge 1 oz patties of chevre in flour, then egg wash, then chopped pecans. In a saute pan melt the butter and once it begins to brown add the chevre cakes and saute until warmed through, remove. Add more butter to skillet and saute the green apple and add the spices. When apple is tender deglaze with Riesling or other wine or liqueur and add brown sugar. Cook until compote has thickened slightly and serve warm with chevre cakes.
