Peach and Blueberry Short Cake

Ingredients

2 Cups All purpose flour
1/3 Cup White sugar
4 tsp Baking powder
1/2 tsp Salt
8 tbs Unsalted butter (chilled)
1 Egg (beaten)
1/3 Cup Milk
For Fruit
4-6 Ripe peaches (sliced)
1 Pint Blueberries
4 tbs Sugar
1/2 tsp Vanilla extract
1/4 tsp Cinnamon
1 tsp Cornstarch

Instructions

For Shortcake:
Sift together the flour, sugar, baking powder and salt.
Cut butter into small pieces.
Add to flour mixture, mix gently
Add egg and milk
Mix until dough just comes together, knead gently
Divide into eight equal portions

For Fruit:
Toss fruit with sugar, cornstarch, vanilla and cinnamon.
Pre-heat oven to 350 degrees
Place fruit in 10 inch baking pan
Place dough on fruit in two rows of four
Bake for 35 minutes or until fruit is tender and the shortcake is lightly browned
Allow to cool before serving
Spoon into bowls
Garnish with fresh whipped cream or vanilla ice cream.
