Jamaican Jerk Seafood Salad

Ingredients
| 6-8 ounces |
Fresh mixed greens |
| 6-8 |
Cherry tomatoes, halved |
| 6-8 |
Slices of cucumber |
| 1 |
Thinly sliced red onion |
| 10 Size 21/25 |
Peeled and divined raw shrimp, thawed |
| 2 ounces |
Jamaican jerk seasoning |
| 3 ounces |
Dark rum |
| 1-2 ounces |
Good quality olive oil |
Instructions
Mix jerk seasoning and rum and let bloom for at least 45 minutes. Whisk in olive oil, add shrimp and let marinate 45 minutes. Meanwhile mix salad ingredients and preheat broiler or oven to 400 degreees. Cook shrimp until just done, 2 -3 minutes per side. Let cool, toss salad with your favorite vinaigrette, and add shrimp - 5 per salad. Serve and enjoy. |
