Wild Mushroom Soup with Wild Rice & Leeks

Ingredients

2 tbsp Vegetable oil
1 gal Cold water
1 lb Mushroom base
1 cup White wine
1/2 cup Diced shallots
2 Onions (fine diced)
2 Large leeks (washed and diced)
1 Bunch celery (fine diced)
1 tbsp Minced garlic
3 lb Gourmet Blend Mushrooms
2 cups Wild rice blend
1 qt Heavy cream
1 lb Butter
1 lb Flour (all purpose)

Instructions

Melt butter, then combine with flour to make a paste.

In a thick bottom sauce pan sauté the onion, leeks and celery for about 5 minutes on medium heat. Then add shallots and garlic, sauté for another 2 to 3 minutes and add mushrooms. Sauté for another 5 minutes then add white wine and mushroom stock. Now bring this to a boil and thicken with roux. Reduce heat to very low, add cream. Now it is ready to serve.
